My name is Amanda, and I’m a pizza/beer/bread addict.
I’m also gluten sensitive.
When I was a child, I had a wheat allergy that I seemed to outgrow. But I spent most of my teen and college years with stomach pain. After two years of doctors appointments, a trip to the ER, and countless tests that revealed nothing, it was determined that wheat and my digestive system just don’t play nice. I was told not to eat gluten. That was 10 years ago. I’m starting this journey now.
This is a true tale of longing for pizza, lusting after beer and drooling over pasta when I can’t have any of it.
